Blueberry Lemon Scones

Blueberry Lemon scones Recipe
 
Amazing,
light and fluffy,
sinfully glazed,
repeatedly asked "did you make these yourself?.... they are ah-mazing"
Blueberry lemon scones
 
these are my go - to recipe for any morning tea, lunch, mummy group, family catch up event etc.... so I pretty much make these at least one a week
....why ?
 
because they are Delicious, easy and hardly any dishes ...simple

 

Recipe
 
1 1/2 cups of self raising flour
1/2 cup of fine sugar (  icing or caster sugar )
100 grams of butter, cold, chopped
1/2 cup of milk
a splash of lemon essence
hand full of fresh blueberry's
milk for brushing
 
icing sugar and lemon juice for glaze

preheat oven to 180 deg c
line baking sheet with grease proof paper  
 
Sift dry ingredients into a mixing bowl
 
Add butter,
 
Combine with fingers till it looks like bread crumbs
 
Make a well in the centre and add the milk and lemon essence
 
Mix with a butter knife * this is important as you don't want to over work the dough.... no one likes a hard scone
 
Add the blueberrys and gently fold into the dough.... * dont over work the blueberrys otherwise your scones turn grey :/

turn onto lightly floured surface and gently mould into disk shape
 
cut scones ( i keep mine small, probably about 4 cm diameter... easier for little hands)
and place on baking tray
 
brush with a little milk
 
and bake for 20 Min's

 
 







 
once completely cooked and cooled you can then glaze the scones, it just gives them a little extra lemony hit
 
 in a smaller bowl ad about half a cup to a cup of icing sugar, then continue to add small amounts of lemon juice and stir until prefer ed consistency
 
..... if its a bit runny add more sugar, if its too thick add more juice ( genius stuff really )
 
 drizzle over scones, briefly chill in fridge
 
serve to the masses , sit back and enjoy the compliments
